Hi Guys! Welcome back! I wanted to let you know about an opportunity to raise money and awareness for Celiac Disease. I was thinking maybe you guys could help me out. I am currently organizing a team to run in the Lake Placid Marathon/Half Marathon on June 11, 2006 .
Team GlutenFreeTM is an endurance sports training program made up of runners and walkers raising funds for Celiac Disease research, awareness programs and children’s Celiac camp scholarship programs. In 2005, we have raised more than $40,000 and sent twelve children to Celiac camps!
Team GlutenFreeTM is currently recruiting for the Lake Placid Marathon, half Marathon and 4 Person Relay. No running experience is required—only a great attitude! We provide the training program and you provide the dedication and commitment to the program.
It is very important that we get as many runners and other supporters as possible so we can raise awareness.

Secondly, I am concerned about the new FDA guidelines that are coming into affect. The proverbial “they” say that distilled vinegar (which is made from gluten-filled grains) is gluten free because the gluten is distilled out. However, when I eat anything containing distilled vinegar (which is just about everything on the market), I have a Dermatitis Herpetiformis outbreak. Anyone else with that problem?

My experience with vinegar has been sour also! What I figured out is I have corn
allergies in addition to gluten issues, so most vinegar in the U.S. is made from
corn. Good quality red wine vinegar and real apple cider vinegar don’t make me
break out in a rash on my face. Instead of the oozing dh I would get a super
scaly eczema rash. Especially try the apple cider vinegar since it is even ok
if you have candida issues that may be exagerrating any problems (according to
what I’ve read). Also, there is also classic lemon that is so healthy and ultra
delicious with olive oil as a salad dressing.

How common is vinegar sensitivity and candida problems in celiacs? I have been following a strict gluten-free diet (with occasional accidents) but still dont feel 100%. Vinegar seems like it might be a problem for me but previously didn’t connect it with celiac disease. Sugar also seems to be a problem. When you go out to eat do you also ask for vinegar-free food?
About the distillation process – I have heard that gluten is soluble in alcohol. My guess is that distillation does not entirely seperate the alcohol from all of the gluten and that some contammination or carry-over occurs. Just a guess. Has anyone ever tested (by ELISA) distilled grain spirits for the presence of gluten?

i also have been on a glutenfree diet for several weeks- recently diagnosed and am still not feeling so great. i also experience the ecaema around my eyes and it is so itchy. i have had this for months however- found out i was using a face cream that advertised it used wheat protein . i didnt realize i had celiac at the time. oh well! so maybe i need to cut out vinegar too- very difficult to get used to. i look forward to the chat room and learning more.
Thanks for the info on distilled vinegar. Yes, I have found all sorts of different ways to substitute for my own cooking. My concern is all the things that are going to be labeled “gluten free” that are made using distilled vinegar. Is that really correct labeling? I tried again to use condiments that use dv but the rash returned.
I, too, have a corn and rice “alergy.” Actually, if I have much of either of these too late in the day, my spastic colon is triggered. So much for evening snacking. No more nachos or popcorn. Makes life so difficult.

I just found this site today….and am sooooooo thrilled to have found such a positive and informative site for Celiacs.
I have had celiac since birth…diagnosed at 2 and needless to say have lived a life (just turned 30) of gluten free! This year has been the best and worst for my celiac issues as it looks like I have more ailments to determine…corn? potatoes? vinegar too?
Gregory, my co-worker developed Celiac this year, unfortunate for him…but I have to say…I have not ever felt so connected….it’s great to relate! We train/coordinate fundraising teams to run marathons together, and at the pasta parties we exchange those knowing glances at how alien you feel lining up for pasta to fill your plate only with salad….or to expect the stranger than strange glances when you ask for only sauce and to “hold the pasta” …
AND his wife Michelle bakes extra GF treats and sends Gregory to the office with them. Talk about SPECIALTY treatment. I LOVE IT!!
It was a challenge growing up to say the least. As a child, it was unheard of….and the products on the market have come a looooong way. There is however always new information and knowledge on our “issues” and this year has been the worst ever for me. I have been battling a nasty case of Dermatitis….
Been seeking the help of a Natural path…but should most likely get in touch with a specialist once again….I’ve since moved away from my long time child hood specialist. Looks like corn, and perhaps vinegar are issues to start looking more closely at.
Living in Toronto, Canada but planning a trip to NYC soon to check out all these amazing shops. My mouth is watering!! Would love a Celiac Chicks T shirt as well.
Perhaps a Celiac Chicks vacation should be planned? I happen to have a travel industry background and would looooooove more than anything to go “cruising” with Celiac chicks. There would never be lack of GF food to share!

I just found this site am I glad. I have always broken out in a horrible red rash on my face and chest. I am sure it has to do with the vinager or beer or wine what else do I need to stay away from and what causes this??
