
This is what it looked like on my walk to the train last Friday. Yeah, that's my house. Just kidding! A celiac chick can dream though, right?
It was beautiful, but treacherous. Why am I telling you this? Well, look who I ended up meeting for lunch that same day! The Pamela of Pamela's Products fame! She hobbled on post-surgery crutches in the snow for our lunch date! Now that is determination! And she is from sunny California! She was SO nice, like most gluten-free food entrepreneurs that I've met. I got to tell her in person how her gluten-free peanut butter cookies once save my life in Venice.
She was in NYC promoting a book that shares the interesting and detailed journeys of various entrepreneurs and their success stories. She was chosen to be featured in A Cup Of Cappuccino For The Entrepreneur's Spirit Vol. II and gave me a sample booklet that included her story. I have to say that the few stories in just the booklet were very captivating, honest, and inspirational!
I thought this was another great reminder that, most of the time, there are actual people behind the different companies with gluten-free products trying to serve us, and they see us as people and not just as dollar signs. That was my warm fuzzy thought for the day.

How cool is it that you got to meet THE Pamela! I just love her products! When I was first diagnosed, Pamela’s GF pancake mix showed me that life without wheat wasn’t going to be as hard as I had imagined:)
