How did this all come about?…
In late 2010 I met Liz at a women’s business event hosted by Marie Forleo. I was immediately impressed as she explained how she shifted gears from being a high powered real estate attorney to starting her own business as a travel agent specializing in luxury vegan safaris in Tanzania. You can read many testimonials about her outstanding service and attention to detail here.
Since Liz was experienced with arranging for serious vegans to be catered to on their trips, I wondered out loud if together we could arrange for a gluten-free safari. This trip is the end result of that initial brainstorming session!
I had Liz, myself, Immaculate and Chef van Niekerk take the NFCA GREAT gluten-free food service training in order to make sure everyone understood the seriousness of truly gluten-free food and safe preparation; this way we could all communicate clearly, and the food could be outstanding and gluten-free!
(Although the food theme of this trip is gluten-free and not necessarily vegan, if requested vegans can be accommodated.)
Liz has worked successfully with Immaculate as her go-to remote consultant in Tanzania for years. Immaculate has exceeded and over-delivered time and again creating customized luxury adventure vacations, tailor-made safaris, wellness retreats and trips to Tanzania for Liz’s clients with special dietary needs. Immaculate built her reputation working at www.timelessdreamtravels.com for many years and has arranged for our transport and safari excursions through them.
Together, Liz and I communicated our vision for a gluten-free luxury safari to Immaculate and she went to work seeking out the perfect collection of camps, lodges and hotels that would be able to not only pull this off, but do it with class. She discovered the Elewana Collection, an award winning travel experience company. We couldn’t have created this trip without the help and skills of Immaculate!
As our native Tanzanian travel expert, Immaculate will be joining us on safari to make sure everything works without a hitch.

After discovering the Elewana Collection, Immaculate met with Chef van Niekerk to discuss our gluten-free vision. Chef van Niekerk has built a long term career working in exclusive kitchens, with his professional career starting at the trendy Melrose Arch Hotel in Johannesburg, moving on to a private island in the Seychelles, and eventually landing him at Riverbend Lodge in the Eastern Cape, South Africa, where he worked as Head Chef for three years prior to joining the Kilindi [Elewana] team.
His professional experience and dedication to the perfect dining experience makes him a perfect match for Kilindi, using his passion for using Zanzibar’s local spices, flavors and ingredients to create their signature ‘Island Fusion’ dishes.
Immaculate was very impressed by Chef van Niekerk’s enthusiastic response to our gluten-free vision! As it turns out, he already had been accommodating gluten-free guests at Elewana, and introduced us to a gluten-free baking mix he uses that is produced in South Africa! Immaculate even enjoyed some of his gluten-free baked goods. I had him send me several recipes to check the ingredients and asked many questions to make sure he really knew what he was doing. He’s excited to create an outstanding gluten-free experience for our larger group, and has already created full menus. I’ll be sharing a few of his recipes soon.

To ensure our gluten-free dining experiences are flawless on this trip, Chef van Niekerk will be traveling with us along the way to oversee all of the food preparation. In addition to this, each lodge, camp, and hotel we stay at will be trained through the NFCA’s GREAT food service training program.
I personally understand how difficult it can be to eat gluten-free while traveling, especially in a far away land. We’re all very excited to share this worry-free, gluten-free safari with you, and we look forward to bonding with you in Tanzania while we create memories that will last a lifetime!
