Vegan Gluten-Free Chocolate Chip Cookies

Let me introduce you to Elana of Elana's Pantry. I *heart* Elana's tasty, yet healthy, gluten-free goodies. I made these almond flour, vegan, chocolate chip cookies and flipped for them. Brought them into work and everyone else (the usual picky gluten eating crowd) flipped for them.

If you are the type of person that is turned off by the words "vegan" and "healthy", just trust me on this one. Seriously. Challenge me even. Go and do yourself the easy favor of baking these babies to prove me wrong. I'm confident you're going to like them.

Oh, and I made them with regular almond meal and they still rocked. Elana swears by this blanched Honeyville almond flour, but this is one of her recipes where you can do your own thing and use regular almond meal- like Bob's Red Mill or the one at Trader Joe's in the nut section.

    I’m so excited. I can eat all of the ingredients in these cookies and they look really good. It can be hard to find baking recipes without rice and sugar. Thank you for sharing this.

    I’m a big fan of Elana’s blog and recipes! She always has such simple, but incredible recipes. I made her salmon recently and it was fantastic.

    My friend Becky makes the most amazing gluten free vegan cookies, the best cookies I’ve ever had, including before I went gluten free!

    She personally makes batches of cookies just for you with substitutes just for you, the things you are staying away from eating. I asked her to make me a batch of cookies free of gluten, diary, eggs, and vanilla. She made the best cookies I have ever tasted. They were plain cookies dipped into chocolate, and put together like a sandwich with cinnamon creme in the middle and decorated with walnuts and coconut flakes on the top. I could not believe they were so good! I was sad to have to go gluten and dairy and egg and vanilla free due to allergies, and Becky is a lifesaver and works magic in the kitchen 🙂

    Hi Kelly! Tried these with Bob’s Red Mill Almond Meal. The dough was runny and they never did get firm. Elana talks about this on her site, but I see that you were able to use Bob’s Red Mill successfully. Did you adjust the amount of oil or something else to make it work? Thanks in advance for your help.
