Have you tried amaranth yet? It’s a fun little gluten-free grain.
I’m absolutely in love with it! I love it as a hot cereal. It kind of reminds me of Cream of Rice or Cream of Wheat. It’s pretty neutral tasting. AND…it’s full of nutrients!
I like to soak it overnight, or rinse it before using it, like quinoa.
Basically, for people with sensitive tummies, it’s a good idea to soak any grain overnight in order to make it easier to digest. This isn’t a new idea, different cultures have been doing it for centuries.
Then just cook it up like rice. One part amaranth, two parts liquid. Bring to boil and then simmer for about 20 minutes. You might have to add more liquid.
So, go ahead….give it a try!

I eat lots of buckwheat and amaranth, as I have a problem with all grass grains. A much milder buckwheat flour can be made in your blender, using unroasted (white) buckwheat groats. I blend a cup of them in my Oster blender for a few minutes until the texture of corn flour. Won’t taste like dirt. : )
I make a delicious cereal by mixing white buckwheat and amaranth 1/2 and 1/2, cooking in milk or water. I usually add raisins, cinnamon, vanilla, grated apple, and, sometimes, beat an egg into it when it’s done. Like eating pudding.
Amaranth is really high in fiber, too! I’ve used Amaranth flour in my baking, but I’ve never tried soaking it and cooking it for hot cereal. It sounds like it works similar to quinoa.
We just starting using amaranth after being gluten free since 2001. We ground it in our mill and LOVE using it in our homemade flour mix.
We’re going to try growing it…already have a package of seeds.
Haven’t tried eating it like Cream of Rice or in the rice cooker.
I’ll add that to my list to try.

Amaranth I read is reallly really high in glycemic level of over 90! mid range is 50
