I’m absolutely in love with it! I love it as a hot cereal. It kind of reminds me of Cream of Rice or Cream of Wheat. It’s pretty neutral tasting. AND…it’s full of nutrients!
I like to soak it overnight, or rinse it before using it, like quinoa.
Basically, for people with sensitive tummies, it’s a good idea to soak any grain overnight in order to make it easier to digest. This isn’t a new idea, different cultures have been doing it for centuries.
Then just cook it up like rice. One part amaranth, two parts liquid. Bring to boil and then simmer for about 20 minutes. You might have to add more liquid.
So, go ahead….give it a try!
