The recipe for this raw cashew cheesecake is from Vegetarian Times. Personally, I didn’t think it really tasted like cheesecake, but it was GOOD! That is all that matters, right? This treat even impressed our very finicky gluten luvin’ co-workers.
One bit of advice that I’d like to pass on at this time comes from a friend that is kind of a big deal at Merrill Lynch: Don’t call your friends that work at any company that is doing somersaults right now! They are more than likely in back to back meetings all day and although people are calling with good intentions, it just adds to the stress right now. Dealing with frantic clients, meetings, and trying to wrap your head around the instability of your bread and butter is enough without having to explain something that is really hard to explain over and over and over again. So, give your friends a few days to digest things and then call them at home.
Hopefully everything will eventually settle down and we’ll all ride this out. In the meantime, rather than emotional junk food binging, why not make some guilt-free cheesecake for yourself or a friend?
