Several of you have asked me about this and now, thanks to Rachel Lerner, I have an answer for you. Gluten-free matzo is now readily available on Amazon. The matzo is called Gluten-free Shemura Oat Matzo and it is made by a rabbi in London.
Matzo Ball Recipe
2 Tbls. vegetable oil
2 large eggs slightly beaten
1/2 cup matzo meal (see instructions below)
1/2 tsp salt
2 tbls. water
Blend oil, eggs matzo meal and salt. Add water and mix well. Cover and put in the refrigerator at least 2 hours or overnight.
Bring 4 quarts of water to a boil. Make balls, using wet hands and drop into boiling water. Cover and cook for 20 min. Will make 6 -8 matzo balls, depending on how large. I usually double or even triple the recipe. (Use larger pot and more water if making larger recipe.)
Make Your Own Matzo Meal
Use your food processor and just process the gluten-free matzo until finely ground.

Mmmm…all of this matzo ball talk is bringing back memories of my favorite soup at Rose's in Portland, Oregon. That was back before I was gluten-free, so I don't think I've eaten matzo ball soup since.

The oat matzah from england is delicious. But the price of $40 is obscene!!
I agree. I have a feeling that most purchases will be just for annual special occasions and religious observances.
If you want to stay away from oats Leibers matzo ball mix is fantastic and oat free. It is one of the few mixes that I don’t doctor up. Make it exactly the way the box directions indicate. At Passsover many gluten free products become available. One I’ve seen is gluten free ice-cream sandwhiches. Not fantastic but decent. Any kosher food store will have Leibers.

I was very suprised that they taste just like the real thing.
