
"Blah blah blah … blah blah"
To begin with, thanks for all the props from some of our super cool readers regarding our first speaking engagement. Needless to say, we don’t have much to report on the other lectures that day due to nervous distraction and hyperhydrosis management! We are so happy to have met a ton of really nice people, and also discovered some great products that we look forward to sharing with you in the near future.
Initially, we were freaked out by the estimated 300 people milling around the exhibits! But we ended up being upstaged by the expert Q and A panel next door, so our nerves were settled by the 20 or so of you in our audience! Thanks for the support some of you gave before we even got started … believe me, it helped. So we basically shared a bit of our personal gluten-free history followed by our enthusiasm for the GF lifestyle which is really what CeliacChicks.com is all about. We highlighted these positive points:
* Although the transition is not easy, we are happy to no longer be ignorant of what foods we are eating.
* Learning the lesson of mind over matter when it comes to food wants, and the conscious decision to be positive about this lifestyle change.
* New awareness of a wide variety of foods that are safe for celiacs, i.e. ethnic foods, that we may never have appreciated or known existed before having to branch out. (Kim quoted directly from this recent NYTimes article that we highly recommend reading)
* Enjoying the process of food preparation which is often overlooked in our busy Fast Food Nation lifestyles and respecting the value of eating meals as a family.
Lastly, we shared a sneak preview of our upcoming blog titled “Finland: Land Of Gluten Free Paradise”. This was a big hit especially since Dr. Green had made several references to Finland being light years ahead of the U.S. in regards to diagnosing celiac disease, gluten-free awareness and food production.
After all the speeches, a lovely GF dinner was served …
