We love it when instead of sitting around complaining about the gluten-free diet, someone does something about the situation. Mimi Winsburg is the perfect example of being a pro-active celiac. She's participating in an Ironman distance triathlon to raise money for the Stanford Celiac Sprue Research Foundation. Janus (the investment firm) will match the funds she raises up to $10,000.
